Winery Background and History:

Jean-Marie Fourrier, a fourth-generation Burgundian vigneron based in Gevrey‑Chambertin, took over the family domaine in 1994. Recognized for his minimalist approach, he eschews green harvesting and limits yield, focusing instead on vineyard expression. Although best known for Premier Cru reds, he also produces small quantities of high-quality white from older vines under the “Vigne Comte de Chapelle” label. This Bourgogne Blanc VV comes from a single vineyard planted in 1963 near Puligny-Meursault and embodies the same austerity, precision, and terroir-driven philosophy that define Fourrier’s top cuvées.  .


Producer and Wine Maker:

Fourrier oversees all aspects of production, from vineyard management to bottling. Grapes are hand-harvested, whole-cluster pressed, fermented with native yeasts in older oak barrels or stainless steel, and aged on lees without fining or filtration. His château-style restraint and minimal interference allow vineyard character and varietal purity to shine. The result is an elegant white Burgundy that carries the clarity and finesse characteristic of his red Burgundies. ()


Vineyards and Micro Climate:

The Comte de Chapelle vineyard, planted in 1963 on clay-limestone soils with granitic influence, is situated between Meursault and Puligny. The vines enjoy moderate yields, cool nights, and warm days. Its altitude and exposure grant vibrant acidity and mineral poise. The vineyard’s mid-slope location ensures optimal ripening balanced by tension. The result is freshness, clarity, and crystalline purity rooted in the terroir. ()


Vinification & Aging Methods:

Grapes undergo gentle whole-cluster pressing. Fermentation occurs with indigenous yeasts in a mix of neutral oak and stainless steel. The wine matures on fine lees in older oak for several months before being bottled unfined and unfiltered. This method retains texture, purity, and aromatic finesse while allowing natural acidity to guide the process. ()


Tasting Notes:

Pale straw color with green highlights. The nose displays fresh pear, white flowers, Asian pear, apple, and a hint of hazelnut and saline minerality. The palate is vibrant, with crisp acidity, medium body, white peach, citrus, and a well-balanced texture leading to a clean, lingering finish. Its density and freshness reflect the vineyard’s granite-laced soils. ()


Food & Wine Pairing:

Great with seafood platters, oysters, scallops, and delicate sushi. It also pairs beautifully with creamy chicken dishes, shellfish risotto, goat cheese, and lightly seasoned vegetable cuisine. Its mineral backbone and bright acidity balance richness while enhancing herbal and floral flavors. ()


Service Methods and Temperatures:

Serve chilled at 10–12 °C in a medium-stem white wine glass to accentuate aromatics and maintain palate freshness. No decanting required. Allow the wine brief rest after opening to uncover its subtleties and texture. ()


Storage and Aging Potential:

With optimal cellar conditions (10–12 °C, 70–80 % humidity), this wine can develop for 5–8 years. Over time it will gain richer aromas of honey, nutty complexity, and deeper mineral tones while preserving its core acidity and clarity. ()
