Winery Background and History

Champagne Jacques Selosse, established in 1949 by Jacques Selosse in Avize, is renowned for its pioneering approach to Champagne production. Under the stewardship of Anselme Selosse since 1980, the estate has embraced biodynamic viticulture and innovative winemaking techniques, including the use of solera systems and oxidative aging. Anselme’s philosophy emphasizes terroir expression and minimal intervention, setting a new standard for grower Champagnes. Today, his son Guillaume Selosse continues this legacy, maintaining the estate’s reputation for excellence and innovation.


Producer and Winemaker

Anselme Selosse, a visionary in the Champagne region, revolutionized traditional practices by introducing Burgundian winemaking methods and a focus on single-vineyard expressions. His commitment to showcasing the unique characteristics of each parcel led to the creation of the “Lieux-Dits” series, including “Les Carelles.” Guillaume Selosse, having worked alongside his father for years, officially took over the domaine in 2020, ensuring the continuation of their distinctive style and dedication to quality.


Vineyards and Microclimate

The “Les Carelles” vineyard is situated in the Grand Cru village of Le Mesnil-sur-Oger, within the Côte des Blancs. This 0.85-hectare parcel, with only 0.45 hectares currently in production due to replanting, features south and southeast-facing slopes with chalky soils. The microclimate, characterized by cool temperatures and ample sunlight, contributes to the development of Chardonnay grapes with exceptional acidity, minerality, and finesse. The vineyard’s unique terroir imparts a distinctive salinity and tension to the wine.


Vinification & Aging Methods

“Les Carelles” is crafted using a perpetual reserve system initiated in 2003, blending multiple vintages to achieve complexity and consistency. Approximately 60% of the blend comes from the base vintage, aged for 10 months in 228-liter barrels (around 20% new oak), while the remaining portion is drawn from the perpetual reserve stored in 12-hectoliter foudres. The wine undergoes extended bottle aging for 5–6 years before disgorgement, with no dosage added, resulting in an Extra Brut style that highlights the purity of the terroir. 


Tasting Notes

This Champagne exhibits a kaleidoscopic bouquet of ripe citrus fruits, pine resin, dried fig, smoke, and tangerine. On the palate, it offers a harmonious balance of richness and tension, with flavors of lemon confit, orange blossom, spice, butter, and baked pastry. The wine’s vibrant acidity and chalky minerality lead to a long, precise finish, showcasing the energy and salinity characteristic of Le Mesnil-sur-Oger.

“Les Carelles” pairs exceptionally well with a variety of dishes. Its vibrant acidity and minerality complement seafood such as oysters, scallops, and lobster. The wine’s richness and complexity also make it a suitable match for poultry dishes, creamy cheeses, and mushroom-based recipes. Its versatility allows it to enhance both delicate and robust flavors, making it an excellent choice for refined cuisine.


Service Methods and Temperatures

Serve this Champagne chilled at 10–12°C (50–54°F) in a tulip-shaped glass to concentrate the aromas and preserve the bubbles. No decanting is necessary; however, allowing the wine to breathe for a few minutes after pouring can help it open up and reveal its full bouquet. Enjoying it at the appropriate temperature will enhance its complexity and elegance.


Storage and Aging Potential

Stored under optimal conditions—cool, dark, and with stable humidity—“Les Carelles” can age gracefully for 10 to 15 years. Over time, it will develop additional complexity, with notes of brioche, toasted nuts, and dried fruits emerging, adding to its depth and character. Its structure and balance make it suitable for extended cellaring, rewarding patience with enhanced nuances.
