Henri Giraud is a historic, family-owned Champagne estate based in Aÿ since the 17th century. Producer and Wine Maker
Led by Claude Giraud and cellar-master Frédéric Mestelan, the Dame-Jane Rosé is crafted through whole-cluster pressing (“Oeil de Perdrix”) with a touch of Pinot Noir maceration, fermented partly in oak and amphorae. Aged sur lie, then blended with Chardonnay and still Pinot Noir, the team ensures expressive complexity and depth .
Vineyards and Micro Climate
Grapes are sourced from Grand Cru Aÿ vineyards on southeast-facing chalk slopes in Champagne’s Vallée de la Marne. This cool, river-moderated climate combined with sustainable biodynamic practices yields concentrated fruit with crisp acidity .
Vinification & Aging Methods
Pinot Noir is gently pressed and fermented with 6% still red Pinot and 30% Chardonnay. Fermentation occurs in oak barrels and terracotta amphorae, followed by sur-lie aging and a blend of 40% reserve wines. The wine is disgorged (last in Jan 2024) with a Brut dosage .
Tasting Notes
A striking pale copper hue reveals aromas of crushed flowers, red berries, brioche, citrus zest, and subtle spice. The palate is full-bodied, textural, and savory, with flavors of cherry, persimmon, mint, and rose petal. It finishes grainy-chalky, saline, and exceptionally long .
