Vineyards and Micro Climate
Grapes are sourced from Grand Cru vineyards in Aÿ (55%) and Louvois (45%) on chalk-rich, southeast-facing slopes near the Marne River. The cool continental climate ensures slow ripening and high acidity, with biodynamic viticulture fostering purity.
Vinification & Aging Methods
The juice is fermented in 3–5-year-old Argonne oak barrels and aged for roughly 12 months. The blend includes 50–60% reserve wine and undergoes 24 months of lees aging in bottle. Dosage is lower (Extra Brut).
Tasting Notes
Pale golden with a fine bead. Aromas of lemon confit, dried flowers, ginger, chamomile, mint, and toasted brioche. The palate is creamy, mineral-rich, robust yet refined, with citrus, pineapple, green apple, pear, and a vibrant saline finish.
