family domaine in Nuits‑Saint‑Georges, led today by Maxime Cheurlin. With roots in Vosne‑Romanée, the domaine sources fruit from exceptional parcels on steep slopes. Renowned for focusing on ancient vines, elegant expression, and minimal intervention, Noëllat consistently crafts terroir-driven, refined Burgundies that echo neighboring Vosne climats.


Producer and Wine Maker: Maxime oversees every stage—from manual harvest of century-old vines to fermentation and élevage. Typically about 20% whole-cluster fermentation, indigenous yeasts, and ~18 months aging in barrel (around 80% new) yield red wines of density, structure and finesse.


Vineyards and Micro Climate: The Aux Boudots parcel spans circa 1.2 hectares on steep, east-exposed slopes bordering Vosne‑Romanée’s Les Malconsorts. The soil is stony clay-limestone, offering drainage and minerality. The vines average over 90 years old, imparting concentration and complexity.


Vinification & Aging Methods: Grapes are destemmed (except for ~20% whole-cluster), fermented with ambient yeasts followed by gentle maceration. The wine is matured for about 18 months in oak barrels (mostly new), unfined and unfiltered, preserving aromatic purity.


Tasting Notes: Deep ruby color. Aromatics of red and black cherries, violets, spice, forest floor and fine earth. The palate is supple yet structured, delivering layered red fruit, saline lift, vibrant acidity and a refined, lingering finish with plush tannins.


Food & Wine Pairing: Perfect with roast duck, game birds (like pheasant or quail), mushroom ragout, herb-crusted lamb, or aged but not overpowering soft cheeses. The wine’s structure complements savory and umami flavors beautifully.


Service Methods and Temperatures: Serve in a medium-large Burgundy glass at 14–16 °C. A gentle decant (~30 minutes) helps integrate aromas and soften the youthful structure.


Storage and Aging Potential: Under proper conditions (~12‑14 °C, humidity ~70 %), this wine is best enjoyed between 2024 and 2035. Over time it will evolve into richer tertiary notes—earth, truffle, dried petals—while retaining intensity and finesse.


Grape Varietals & Percentage Used: 100% Pinot Noir, allowed for Nuits‑Saint‑Georges Premier Cru AOC (up to 15% accessory varieties are permitted by regulations but rarely used).
