Winery Background and History

Domaine Roland Lavantureux, established in 1978 by Roland Lavantureux, is located in Lignorelles, within the Chablis region of Burgundy, France. The estate has grown over the years, with Roland’s sons, Arnaud and David, joining the family business. They have expanded their vineyard holdings and have been instrumental in elevating the domaine’s reputation for producing high-quality Chablis wines that reflect the unique terroir of the region. 


Producer and Winemaker

Arnaud and David Lavantureux, representing the family’s second generation, currently manage the domaine. Arnaud oversees the vineyards and cellar operations, while David leads marketing and sales efforts. Their combined expertise and commitment to quality have positioned Domaine Roland Lavantureux as a notable producer in Chablis. 


Vineyards and Microclimate

The “Vau de Vey” Premier Cru vineyard is characterized by its extremely steep slopes, abundant in limestone, which contributes to the wine’s distinctive saline minerality. This terroir imparts a direct and pure expression, full of energy, making it a quintessential representation of Chablis.

Vinification & Aging Methods

The grapes for this wine are hand-harvested and undergo fermentation in large oak barrels at controlled temperatures. Following fermentation, the wine is aged for several months in oak barrels, which contributes to its complexity and depth.

The 2021 “Vau de Vey” exhibits a clear and classic nose with citrus notes, leading to a palate of high tension, crispness, and verticality.  Decanter magazine notes an intriguing nose with quince and exotic fruits, accompanied by strident acidity that may benefit from additional time to settle.

This wine pairs excellently with seafood, fish, veal, or poultry dishes.  Its crisp acidity and mineral undertones complement the delicate flavors of these dishes, enhancing the overall dining experience.


Service Methods and Temperatures

For optimal enjoyment, serve this wine moderately chilled at 11-13°C (52-55°F).  Decanting is not necessary, but allowing the wine to breathe for a few minutes before serving can enhance its aromatic profile.

The 2021 “Vau de Vey” has good aging potential, with the ability to develop additional complexity over the next 10 years.  Proper cellaring conditions—consistent temperature, moderate humidity, and protection from light—will allow the wine to mature gracefully.
