Winery Background and History

Domaine Patrick Javillier, situated in Meursault within Burgundy’s Côte de Beaune, is a family-run estate renowned for its meticulous approach to winemaking. Established by Patrick Javillier, who took over the family vineyards in 1974 after completing his oenology studies in Dijon, the domaine has grown from three to ten hectares. Javillier’s philosophy emphasizes blending different climats to create wines that are greater than the sum of their parts, aiming to produce wines that reflect the true character of Meursault.

Producer and Winemaker

Patrick Javillier, the founder and winemaker, is dedicated to expressing the nuances of Meursault’s terroir through his wines. With a philosophy centered on minimal intervention, he allows the natural qualities of the grapes to shine. His daughter, Marion Javillier, has joined the estate, continuing the family’s commitment to excellence and tradition in winemaking.

Vineyards and Micro Climate

The Cuvée Tête de Murger is a blend of two distinct climats: Les Casse-Têtes, located on the upper slopes west of Meursault, and Les Murgers de Monthélie, situated near the border with Monthélie. Les Casse-Têtes contributes minerality and tension, while Les Murgers de Monthélie adds richness and length. The vineyards benefit from limestone and clay soils, providing excellent drainage and mineral richness. The microclimate, influenced by the elevation and exposure, contributes to the grapes’ balanced ripening and the wine’s complexity.

Vinification & Aging Methods

Grapes are hand-harvested and undergo gentle pressing to preserve their quality. Fermentation occurs in oak barrels, with a portion of new oak used to impart subtle complexity. The wine is aged on its lees for several months, enhancing its texture and depth. This approach results in a wine that balances freshness with richness, embodying the character of Meursault.

Tasting Notes

The 2022 Meursault Cuvée Tête de Murger exhibits a mid lemon and lime color. The bouquet is initially reserved but reveals promise, developing beautifully with time. On the palate, the wine is well-balanced, taut, and fresh, with fine acidity. Flavors of mandarin and quince are underpinned by aromas of warm butter and fresh dough, leading to a long and elegant finish. This wine showcases the elegance and complexity characteristic of Meursault.

Food & Wine Pairing

This Meursault pairs beautifully with a variety of dishes. Its richness and complexity complement seafood dishes such as grilled salmon or tuna tartare. It also pairs well with poultry, creamy pasta dishes, and soft cheeses like Brie or Camembert. For a delightful contrast, serve it alongside dishes featuring mushrooms or truffle-infused sauces.

Service Methods and Temperatures

Serve this wine at 12–14°C (54–57°F) to fully appreciate its aromatic complexity and texture. Using a white wine glass with a slightly larger bowl can enhance the expression of its aromas. Decanting is not necessary, but allowing the wine to breathe for a few minutes after opening can help it open up gracefully.

Storage and Aging Potential

While enjoyable now, the 2022 Meursault Cuvée Tête de Murger has the structure to age gracefully for 8–10 years. Proper cellaring conditions—cool, dark, and with consistent temperature—will allow the wine to develop additional complexity and depth over time, revealing nuanced flavors and aromas.
