Winery Background and History

Domaine Lucien Boillot & Fils, rooted in Burgundy’s esteemed winemaking tradition, is helmed by Pierre Boillot, representing the sixth generation of the Boillot family. Originally based in Volnay, the family expanded to Gevrey-Chambertin in the 1950s. Pierre Boillot manages vineyards across both Côte de Beaune and Côte de Nuits, producing wines that emphasize purity and terroir expression. His approach marries traditional practices with meticulous vineyard management, resulting in wines of finesse and authenticity. 


Producer and Winemaker

Pierre Boillot, the current proprietor and winemaker, oversees the estate’s operations. He employs sustainable farming practices, known as “lutte raisonnée,” minimizing chemical interventions and promoting soil health. In the cellar, Pierre favors traditional methods: grapes are destemmed, fermentation occurs with indigenous yeasts, and aging is conducted in French oak barrels. His philosophy centers on crafting wines that reflect their origin, showcasing the unique characteristics of each vineyard site. 


Vineyards and Micro Climate

The “Les Brouillards” vineyard, classified as Premier Cru, is situated in the Volnay appellation of the Côte de Beaune. This 0.34-hectare parcel, planted in 1984, features clay-limestone soils with a notable presence of pebbles. The site’s microclimate benefits from optimal sun exposure and drainage, fostering the cultivation of Pinot Noir grapes that yield wines of elegance and complexity. 


Vinification & Aging Methods

Harvested grapes are fully destemmed and undergo a cold soak for 3 to 5 days to enhance color and aroma extraction. Fermentation proceeds naturally with indigenous yeasts over approximately 18 days, incorporating one to two punch-downs daily. The wine is then aged for 16 to 18 months in French oak barrels, with about 30% being new oak. Bottling is done without fining or filtration, preserving the wine’s integrity. 


Tasting Notes

The 2017 “Les Brouillards” exhibits a vivid magenta hue. The nose reveals aromas of raspberry, blackberry, and delicate white flowers. On the palate, it offers a refined, elegant profile with soft, well-integrated tannins and harmonious balance. Flavors of fresh strawberries, red cherries, rhubarb, and subtle notes of black tea and red licorice culminate in a lingering finish. 


Food & Wine Pairing

This Volnay pairs well with dishes such as roast duck, coq au vin, mushroom risotto, or grilled salmon. Its finesse and aromatic complexity complement earthy flavors and lighter meats, enhancing the dining experience without overpowering the palate.


Service Methods and Temperatures

Serve at 16–18°C (60–64°F) in Burgundy-style glasses to accentuate its aromatic nuances. Decanting for 30 minutes can help the wine open up, revealing its full bouquet and depth.


Storage and Aging Potential

Stored under optimal conditions—cool, dark, and with stable humidity—this wine can age gracefully for 8 to 12 years. Over time, it will develop tertiary aromas such as forest floor, truffle, and dried fruits, adding complexity to its profile.
