Winery Background and History

Domaine Jessiaume, established in 1850, is located in Santenay, Burgundy. The estate has a rich history of producing high-quality wines, combining traditional methods with modern techniques to express the unique terroir of the region. Over the years, Domaine Jessiaume has gained recognition for its commitment to excellence and sustainability.

Producer and Winemaker

The domaine is managed by a dedicated team that emphasizes minimal intervention in winemaking. This approach allows the natural characteristics of the grapes and the terroir to be fully expressed in each bottle. The winemaking process is overseen with meticulous attention to detail, ensuring the production of wines that reflect the estate’s philosophy and heritage.

Vineyards and Microclimate

The “Les Gravières” Premier Cru vineyard spans 3.8 hectares and is characterized by soils rich in oolitic limestone and marl. This terroir contributes to well-constructed, hearty Pinot Noir wines. The 2022 “Numerus Clausus” cuvée is crafted from the estate’s oldest vines, averaging 80 years in age, located on a south-east facing slope. This prime exposure ensures optimal sunlight, promoting full ripening of the Pinot Noir grapes. The combination of mature vines and favorable microclimate contributes to the wine’s richness and complexity.

Vinification & Aging Methods

After sorting in the vineyard and winery, the grapes are de-stemmed and undergo a cold pre-fermentation maceration for 5 days. Spontaneous fermentation follows, with the grapes remaining in tank for approximately 3 weeks during alcoholic fermentation. The wine is then transferred by gravity into oak barrels (35% new oak) for 14 months of aging. No fining is performed, and only the best barrels from these old vines are selected for this cuvée.

Tasting Notes

The 2022 “Numerus Clausus” exhibits a deep and dark fruit profile, with notes of cassis and mulberry, complemented by hints of leather, bay leaf, wood smoke, and spice from the oak. The palate is intense, generous, and round, supported by firm, slightly rugged tannins and surprising freshness, leading to a persistent finish. This wine showcases the typical aromas of “Les Gravières,” mixing red and black fruits with a spicy touch in a beautiful complexity.

Food & Wine Pairing

This robust wine pairs excellently with hearty dishes such as roasted or grilled meats, game, and rich stews. Its structure and depth complement bold flavors, while its acidity balances the richness of these dishes.

Service Methods and Temperatures

For optimal enjoyment, serve this wine at a temperature of 16-18°C (60-64°F). Decanting for about 30-60 minutes before serving can help open up the aromas and flavors, especially in its youth.

Storage and Aging Potential

The 2022 “Numerus Clausus” has a true aging potential, with an aging capacity of 10-15 years. Proper cellaring conditions—consistent temperature, moderate humidity, and protection from light—will allow the wine to develop additional complexity and depth over time.
