Winery Background and History

Established in 1825 in Nuits-Saint-Georges, Domaine Faiveley is a family-owned estate that has become one of Burgundy’s most prominent producers. With over 120 hectares of vineyards across the Côte de Nuits, Côte de Beaune, and Côte Chalonnaise, the domaine emphasizes traditional winemaking techniques combined with modern innovations. Their commitment to expressing the unique terroirs of Burgundy has solidified their reputation for producing wines of exceptional quality and character.

Producer and Winemaker

Currently led by Erwan Faiveley, the seventh generation of the Faiveley family, the domaine continues to uphold its legacy of excellence. Under his guidance, the winemaking team focuses on sustainable viticulture and precise vinification methods to highlight the distinctiveness of each vineyard site. Their approach includes careful grape selection, gentle extraction, and aging in French oak barrels to enhance the complexity and structure of their wines.

Vineyards and Micro Climate

The “Les Saint-Georges” vineyard is one of the oldest climats in Burgundy, planted around the year 1000. Domaine Faiveley’s 0.23-hectare parcel, planted in 1933 and 1974, features deep brown limestone and pebble soils with eastern exposure. The region’s continental climate, characterized by warm summers and cool winters, provides optimal conditions for Pinot Noir cultivation, contributing to the wine’s structure and elegance.

Vinification & Aging Methods

Grapes are hand-harvested and undergo careful sorting before fermentation in temperature-controlled stainless steel vats. The wine is then aged for 16 months in French oak barrels, with 40-50% new oak and the remainder in once-used barrels. This aging process enhances the wine’s complexity and allows for integration of oak flavors without overpowering the fruit.

Tasting Notes

The 2021 vintage presents a deep ruby red hue. The nose reveals aromas of ripe fruits and warm spices, leading to a smooth, clean attack on the palate. The wine is well-balanced, with rich, smooth tannins and a harmonious structure that exemplifies the elegance of this Premier Cru.

Food & Wine Pairing

This refined Pinot Noir pairs excellently with dishes such as duck breast in cranberry sauce, roasted and grilled red meats, and game. Its balanced acidity and silky tannins complement the richness of these dishes, while its aromatic complexity enhances their flavors.

Service Methods and Temperatures

Serve at 16°C to 18°C (61°F to 64°F) in large Burgundy-style glasses to fully appreciate its aromatic complexity. Decanting for 1 to 2 hours is recommended to allow the wine to open up and reveal its nuanced flavors. This preparation enhances the tasting experience, highlighting the wine’s elegance and depth.

Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2021 vintage has excellent aging potential, expected to evolve gracefully over the next 10 to 15 years. Over time, the wine will develop additional complexity, with tertiary notes such as dried fruits, forest floor, and subtle spice emerging, enhancing its depth and richness.
