Vineyards and Micro Climate

The vineyard’s name, meaning “Valley of the Monks,” hints at its historical significance. Situated on a steep slope with east-facing exposure, it benefits from optimal sunlight and excellent drainage. Vinification & Aging Methods
Grapes are hand-harvested and undergo meticulous sorting. Fermentation takes place in stainless steel vats, with careful temperature control to preserve the purity of fruit. The wine is then aged for 16 months in French oak barrels, with 40-50% new oak and the remainder in once-used barrels. This aging regimen imparts subtle oak nuances while allowing the vineyard’s character to shine through.
