Winery Background and History

Established in the 1730s, Domaine de Montille is a historic Burgundy estate renowned for its commitment to traditional winemaking and terroir expression. The domaine gained prominence under Hubert de Montille, who, from the mid-20th century, championed estate bottling and organic practices. Today, his children, Etienne and Alix de Montille, continue the legacy, managing vineyards across the Côte d’Or with a focus on producing wines that reflect the unique characteristics of each parcel. The estate has been certified organic since 2012 and employs biodynamic principles in its viticulture. 


Producer and Winemaker

Etienne de Montille oversees the estate’s operations, upholding the family’s dedication to quality and authenticity. The winemaking team, including American-born Brian Sieve, emphasizes minimal intervention, allowing the wines to showcase their origin. Their approach combines traditional methods with modern precision, resulting in wines that are both expressive and age-worthy. 


Vineyards and Micro Climate

The “En Remilly” vineyard is situated on the steep slopes of Saint-Aubin, adjacent to the renowned Puligny-Montrachet appellation. Domaine de Montille cultivates a 1.7-hectare parcel of seventy-year-old vines in thin, rocky soils at the top of the slope. The site’s elevation and exposure contribute to a microclimate that fosters slow ripening, preserving acidity and enhancing aromatic complexity. In 2021, severe frost reduced yields by 80%, resulting in only seven barrels produced. 


Vinification & Aging Methods

Grapes are hand-harvested and sorted to ensure optimal quality. Fermentation occurs using indigenous yeasts in oak barrels, promoting a natural expression of the terroir. The wine undergoes aging in French oak barrels, with a portion being new oak, for approximately 12 months. This process enhances the wine’s complexity while maintaining its purity and balance. 


Tasting Notes

The 2021 Saint-Aubin 1er Cru En Remilly exhibits a fragrant nose of pressed white flowers, linden, and pear, complemented by notes of apple, apricot, and quince with hints of spice and marzipan. On the palate, it is well-balanced, elegant, and pure, featuring a fine thread of acidity leading to a ginger-tinged finish. The wine’s texture is dense and broad, with balanced acidity and enough extract to ensure an exquisite finish. 


Food & Wine Pairing

This Chardonnay pairs beautifully with a variety of dishes, including grilled seafood, roasted poultry, and creamy pasta dishes. Its acidity and minerality complement rich sauces and cheeses, making it a versatile choice for both traditional and contemporary cuisine. Service Methods and Temperatures

Serve the 2021 Saint-Aubin 1er Cru En Remilly at a temperature of 11°C to 13°C (52°F to 55°F) to fully appreciate its aromatic complexity and balance. Use Burgundy-style white wine glasses to enhance the wine’s bouquet and texture. Decanting is not necessary, but allowing the wine to breathe for a few minutes before serving can help open up its flavors and aromas.


Storage and Aging Potential

Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2021 vintage has the potential to age gracefully over the next 7 to 15 years, developing additional complexity and depth. With proper cellaring, expect the emergence of tertiary notes such as dried fruits, honey, and nutty nuances, enhancing the wine’s richness and character.
