Winery Background and History
Founded in the 18th century and revitalized by Hubert de Montille in the mid-20th century, Domaine de Montille is a prestigious estate based in Volnay, Burgundy. The domaine gained acclaim for its commitment to traditional winemaking and terroir expression. Under the stewardship of Hubert’s son, Étienne de Montille, the estate expanded its holdings and embraced organic and biodynamic viticulture, achieving organic certification in 2012. Today, Domaine de Montille is renowned for producing elegant, age-worthy wines that reflect the unique characteristics of their vineyard sites.
Producer and Winemaker
Étienne de Montille, a trained lawyer turned vigneron, has been instrumental in modernizing the estate while preserving its core philosophies. He collaborates closely with American-born winemaker Brian Sieve, who joined the domaine in 2012. Together, they focus on minimal intervention in the cellar, allowing the wines to express their origin. Their approach combines traditional techniques with modern precision, resulting in wines that are both expressive and refined.
Vineyards and Micro Climate
The ‘Le Clos du Château’ vineyard is a 4.9-hectare monopole situated directly in front of the Château de Puligny-Montrachet. Despite its prime location, it falls under the Bourgogne Blanc appellation due to historical classification. The vineyard’s limestone-rich soils and enclosed walls create a unique microclimate that fosters optimal ripening conditions for Chardonnay. The 2021 vintage experienced a challenging growing season with spring frosts and a cool summer, resulting in lower yields but wines of great purity and tension.
Vinification & Aging Methods
Grapes are hand-harvested and undergo gentle pressing to preserve freshness. Fermentation occurs in a combination of stainless steel tanks and French oak barrels, with only 5% new oak used to maintain a subtle influence. The wine is aged on fine lees for approximately 12 months, enhancing texture and complexity while retaining vibrant acidity and minerality.
Tasting Notes
The 2021 Bourgogne Blanc Le Clos du Château exhibits a pale gold hue with green reflections. The nose offers aromas of citrus fruits, green apple, and white flowers, complemented by subtle notes of flint and almond. On the palate, the wine is crisp and precise, with a lively acidity and a mineral-driven finish. The restrained use of oak allows the purity of the fruit and the expression of the terroir to shine through.
Food & Wine Pairing
This Chardonnay pairs beautifully with seafood dishes such as grilled shrimp, scallops, and oysters, where its minerality complements the brininess of the shellfish. It also harmonizes with poultry in creamy sauces, roasted vegetables, and soft cheeses like Brie or Camembert. The wine’s vibrant acidity and subtle complexity enhance the flavors of these dishes, making it a versatile companion at the table.
Service Methods and Temperatures
Serve the wine at 11°C to 13°C (52°F to 55°F) to fully appreciate its aromatic complexity and balance. Decanting for 15-20 minutes before serving can help open up its bouquet and enhance its flavors. Using large, tulip-shaped white wine glasses will concentrate the aromas and allow the wine to express its full character.
Storage and Aging Potential
Store bottles horizontally in a cool, dark place with consistent temperature and humidity. The 2021 vintage can be enjoyed now or over the next 5 to 7 years. With proper cellaring, it has the potential to develop additional complexity and depth, enhancing the wine’s richness and character.
