Domaine de l’Abbaye de Santenay is a historic estate situated in the village of Santenay, within the Côte de Beaune subregion of Burgundy, France. The domaine is known for producing wines that reflect the unique terroir of Santenay, with a focus on both red and white Burgundy varietals. The estate’s commitment to traditional winemaking practices and respect for the land has earned it recognition among Burgundy enthusiasts.

Producer and Winemaker

The domaine is managed by Ludovic Pierrot, who oversees both vineyard cultivation and winemaking. Pierrot’s approach emphasizes minimal intervention, allowing the characteristics of the terroir to shine through. His dedication to quality and tradition ensures that each wine produced at the estate maintains the authenticity and elegance associated with Burgundy wines.

Vineyards and Micro Climate

The ‘Champs Claude’ vineyard is located in Santenay, characterized by its southeast-facing slopes and clay-limestone soils. This orientation provides optimal sun exposure, promoting the ripening of Pinot Noir grapes. The microclimate, influenced by the surrounding hills and proximity to the Côte d’Or escarpment, contributes to the development of wines with balanced acidity and minerality.

Vinification & Aging Methods

The 2018 vintage was produced using traditional Burgundian methods. Grapes were hand-harvested, with 80% destemmed and subjected to a cold soak. Fermentation occurred in oak barrels, 20% of which were new, followed by malolactic fermentation. The wine was aged for 16 months without filtration, allowing it to develop its characteristic depth and structure.

Tasting Notes

The 2018 Santenay ‘Champs Claude’ presents a fruit-forward profile with a beautiful nose. On the palate, it is silky, showcasing red jammy fruit and good acidity. The wine’s structure and complexity make it a noteworthy example of Pinot Noir from this esteemed vineyard.

Food & Wine Pairing

This wine pairs well with a variety of dishes, including roasted poultry, grilled meats, and earthy mushroom-based dishes. Its acidity and tannic structure complement the flavors of these foods, making it a versatile choice for both casual and formal dining occasions.

Service Methods and Temperatures

Serve the wine slightly below room temperature, at around 16–18°C (60–64°F). Use Burgundy glasses to concentrate the aromas and flavors. Decanting for 30 minutes before serving can help to open up the wine and enhance its aromatic profile.

Storage and Aging Potential

Store the wine in a cool, dark place with a consistent temperature, ideally between 10–13°C (50–55°F). The 2018 vintage has the potential to age gracefully for 5–10 years, during which it will develop additional complexity and tertiary flavors.
