Winery Background and History

In 2013, the city of Dijon acquired the 160-hectare Domaine de la Cras, located just outside the city limits. This estate includes 8 hectares of vineyards—5 hectares planted with red varieties and 3 hectares with white—classified under the Bourgogne AOC, with the potential for an additional 13 hectares. Marc Soyard, a young vigneron with experience at Domaine Bizot, has been managing the property since 2014. Under his guidance, the estate practices organic and biodynamic viticulture, although it is not officially certified.


Producer and Winemaker

Marc Soyard oversees all aspects of production at Domaine de la Cras, from vineyard management to winemaking. His approach emphasizes minimal intervention and sustainable practices, aiming to authentically express the unique terroir of the Coteaux de Dijon.


Vineyards and Microclimate

The vineyards of Domaine de la Cras are situated on the hills overlooking Dijon, characterized by limestone-rich soils and a continental climate. These conditions are ideal for cultivating Chardonnay, contributing to the wine’s minerality and complexity.

Vinification & Aging Methods

The Cras Blanc Monopole is crafted from the best-exposed heart of the 2.5-hectare block of Chardonnay at the domaine. This special cuvée is aged for at least 18 months in new and used barrels.

The 2020 vintage of Cras Blanc Monopole is noted for its vibrant acidity and minerality, with flavors of pear and apple expressing a pleasant freshness and tension.

This wine pairs excellently with dishes such as grilled fish, scallop terrine, or roasted veal. Its acidity and fruit flavors complement these foods, enhancing the overall dining experience.


Service Methods and Temperatures

For optimal enjoyment, serve this wine at a temperature of 10-12°C (50-54°F). Decanting is not necessary, but allowing the wine to breathe for a few minutes before serving can help open up its aromas and flavors.


Storage and Aging Potential

The 2020 vintage has the potential to develop additional complexity over the next 2 to 5 years. Proper cellaring conditions—consistent temperature, moderate humidity, and protection from light—will facilitate this development.
