Winery Background and History

Domaine de Bila-Haut, established by renowned winemaker Michel Chapoutier, is located in the Roussillon region of southern France. Drawn to the area’s rich viticultural potential, Chapoutier acquired the estate in the late 1990s. The name “Bila-Haut” combines “Bila,” meaning “hill” in the local dialect, and “Haut,” meaning “high,” reflecting the estate’s elevated terrain. Since its inception, Domaine de Bila-Haut has been committed to producing wines that express the unique terroir of the region, utilizing biodynamic farming practices and minimal intervention winemaking techniques. The Occultum Lapidem, translating to “hidden gem,” is one of the estate’s flagship wines, showcasing the depth and complexity achievable in Roussillon wines.


Producer and Winemaker

Michel Chapoutier, a visionary in the world of wine, leads the production at Domaine de Bila-Haut. With a family history in winemaking dating back to 1808, Chapoutier has expanded his expertise beyond the Rhône Valley into Roussillon. His philosophy centers on biodynamic viticulture, allowing the terroir to speak through the wines. Chapoutier’s hands-on approach and dedication to quality have solidified his reputation as a leading figure in contemporary winemaking.


Vineyards and Micro Climate

The vineyards of Domaine de Bila-Haut are situated in the Côtes du Roussillon appellation, particularly around the village of Latour de France. This area is characterized by a Mediterranean climate with hot, dry summers and mild winters, influenced by the proximity to the Pyrenees and the Mediterranean Sea. The diverse soils include gneiss, schist, and limestone, providing excellent drainage and imparting distinct mineral qualities to the wines. The rugged terrain and varied elevations contribute to a range of microclimates, allowing for the cultivation of different grape varieties that thrive under these conditions. The estate practices biodynamic farming, enhancing soil vitality and promoting biodiversity, which in turn reflects in the complexity and balance of the wines produced.

Vinification & Aging Methods

The 2019 Occultum Lapidem is crafted with meticulous attention to detail. Grapes are hand-harvested to ensure optimal ripeness and integrity. Upon arrival at the winery, the fruit undergoes destemming and is fermented in concrete vats. This choice of vessel allows for precise temperature control and preserves the purity of the fruit. The fermentation process includes regular punch-downs and pump-overs to extract desirable color, flavor, and tannins. Post-fermentation, the wine remains in concrete tanks for maturation, a decision aimed at maintaining the wine’s freshness and allowing the true expression of the terroir without the influence of oak. This method results in a wine that is both vibrant and reflective of its origin.

Tasting Notes

The 2019 Occultum Lapidem presents a deep, dark ruby hue. The nose is rich and aromatic, offering notes of dark berries, leather, coffee, pepper, violet, lavender, and licorice. On the palate, the wine is full-bodied and balanced, with flavors of black fruits, smoky herbs, and a touch of chocolate. The tannins are well-integrated, providing a smooth texture and a lingering finish.
