Winery Background and History

Domaine Chevigny‑Rousseau traces its roots to 1947, established near Vosne‑Romanée. Though modest in size (~4 ha), it cultivates esteemed Côte de Nuits parcels. Under Pascal Chevigny’s leadership the estate has earned a reputation for precise, terroir-driven Pinot Noir crafted with traditional techniques. The domain, formerly known as Domaine Pascal Chevigny, maintained generational dedication to Burgundy quality, drawing respect from enthusiasts and sommeliers alike.

Producer and Wine Maker

Pascal Chevigny oversees vineyard and cellar practices. His method emphasizes hand-harvesting, meticulous sorting, and vinification using indigenous yeasts in small open tanks. Aging in French oak (around 30% new) for 12–18 months ensures the wine reflects terroir with restrained extraction and balanced structure. The approach marries tradition with finesse, striving for clarity of site expression.

Vineyards and Micro Climate

Les Combottes is a revered Premier Cru in central Chambolle‑Musigny, nestled among top climats like Musigny and Bonnes Mares. Vineyards occupy gently sloping, limestone-rich soils that offer good drainage and sun exposure. The continental Burgundy climate brings warm days and cool nights, promoting aromatic complexity, freshness, and elegance in the fruit.

Vinification & Aging Methods

Hand-harvested grapes are fully destemmed, fermented with indigenous yeasts and moderate punch-downs. The wine undergoes 12–18 months aging in French oak, approximately 30% new. No fining or filtration is typically applied, preserving texture and aromatic integrity. Sulfites are used judiciously.

Tasting Notes

Crafted in a light, elegant style with notable finesse, the pallet features vibrant cherry, raspberry, and floral violet aromas, coupled with earthy notes of mushroom and forest floor. The palate is smooth and balanced, showing refined tannins, bright acidity, red fruit intensity, and a lingering mineral-rich finish.

Food & Wine Pairing

Ideal with roast duck, goose and game birds, veal, mushroom risotto, and aged cheeses like Gruyère. Its elegant depth also complements poached chicken with wild mushrooms or beef tenderloin.

Service Methods and Temperatures

Serve at 15–16 °C in Burgundy-style glasses. Decant for 30–45 minutes to allow aromatics and structure to open. Avoid over-chilling to preserve nuance.

Storage and Aging Potential

Drink from 2023 through about 2032. With ideal cellar conditions (12–14 °C, stable humidity), expect development of tertiary notes—dried fruit, sous-bois, truffle—while maintaining vibrant fruit and refinement.
