Winery Background and History

Domaine Chavy‑Chouet is a seventh-generation family estate, rooted in Puligny‑Montrachet and Meursault since 1982. Under Romaric Chavy’s leadership since 2014, the domaine has grown to 15 ha across the Côte de Beaune, earning acclaim for expressive, terroir-driven whites. Their philosophy combines sustainable biodynamic practices, minimal intervention, and meticulous craftsmanship, elevating their wines among Burgundy connoisseurs. 


Producer and Wine Maker

Romaric Chavy oversees both vineyard and cellar, emphasizing native yeasts, whole-bunch pressing, and restrained use of new oak. His work balances traditional methods with exacting precision, resulting in wines of clarity, texture, and site authenticity.


Vineyards and Micro Climate

Les Folatieres is a Premier Cru site on limestone-rich slopes in Puligny-Montrachet. The vines (circa 60 years old) benefit from optimal drainage, mid-slope exposure, and a continental climate with warm days and cool nights—traits that promote concentration, minerality, and aromatic complexity. 


Vinification & Aging Methods

Grapes are hand-picked, gently pressed, and fermented with indigenous yeasts. The wine is aged for 12 months in French oak (20% new), with light filtration prior to bottling to preserve vibrancy and texture.


Tasting Notes

Pale lemon color. The nose presents yellow-fleshed fruit, toasted bread, honey, bay leaf, and crushed rocks. On the palate: vibrant pear, peach, pomelo, intense minerality, and a rich but poised texture. Finishes long, refined, and expressive. 


Food & Wine Pairing

Pairs beautifully with roast chicken, turkey, shellfish with herb butter, richer fish dishes, and soft cheeses. Also complements creamy pasta and poultry prepared with mild spices.


Service Methods and Temperatures

Serve at 11–12 °C in white Burgundy glasses. No decanting necessary; opening 15–20 minutes in advance enhances aromatic clarity. Avoid over-chilling to preserve complexity. 


Storage and Aging Potential

Best enjoyed 2025–2035. With proper cellaring (12–14 °C, stable humidity), the wine will develop deeper texture, tertiary layers of toasted nuts, and sustained minerality.
