Winery Background and History

Domaine Chavy-Chouet, in family hands for seven generations, roots back to Puligny‑Montrachet and Meursault lands. Romaric Chavy took leadership in 2014, ushering in a refined era spanning 15 ha across Côte de Beaune. The estate blends ancestral technique with biodynamic and sustainable practices, gaining swift acclaim for its terrior-expressive whites. Working with hand-harvested vines and low intervention, the domaine has become a rising star among Burgundy enthusiasts  .


Producer and Wine Maker

Led by Romaric Chavy, a seventh-generation vigneron, the domaine champions subtle, natural winemaking and respect for each plot. Committed to minimal intervention, they use natural yeasts, gentle extraction, and a mix of stainless steel and oak fermentation. Romaric balances traditional methods with modern precision, resulting in highly textured, precise wines that emphasize clarity and energy .


Vineyards and Micro Climate

“Les Casse‑Têtes” comes from a 0.6 ha parcel planted in millerandage-prone, pebbly limestone soils. These challenging plots—reflected in the name, which means “headache”—yield low yields and concentrated musts. The cooler alti­tude and limestone-rich terroir, coupled with Meursault’s continental climate, produce energetic fruit with high tension and fresh minerality.


Vinification & Aging Methods

Grapes are hand-picked, lightly pressed, then fermented with indigenous yeasts. A mix of barrels and stainless steel is used; aging lasts around 10–12 months, often with no lees stirring or batônnage. This restraint preserves freshness and structure. Bottling includes light filtration, with no chaptalization employed  .


Tasting Notes

The wine is pale straw with a green tint. Aromas of orange peel, pear, quince, and shortcrust pastry emerge, followed by saline hay and wet-stone nuances. The palate opens bright and controlled; citrus, white fruit, and a refreshing minerality weave through to a crisp, long finish—elegant and tightly coiled  .


Food & Wine Pairing

Ideal with roast chicken, turkey, shellfish in herb butter, and creamy pasta. Also complements grilled red mullet or sole, and richer dishes like mushroom risotto or crab cakes. Soft cheeses such as Brie or aged Comté enhance its fruit-mineral interplay  .


Service Methods and Temperatures

Serve at 11–14 °C in white Burgundy glasses. No decanting is necessary; opening 15–20 minutes before serving enhances aromatic depth. Don’t serve too cold to preserve structure and expressive tension  .


Storage and Aging Potential

Enjoy between 2024 and 2034. Cellared at 12–14 °C with stable humidity, it will develop layers of richness while retaining its pure mineral core. Structure and acidity suggest longevity, with tertiary notes evolving over time  .
