Winery Background and History:

Dom Pérignon is Moët & Chandon’s prestige vintage Champagne introduced in 1921 produced only in exceptional years and aged a minimum of eight years before release The 2015 vintage reflects the winery’s philosophy of balancing purity and power through precise production and thoughtful maturation

Producer and Wine Maker:

Final blend of 51 % Pinot Noir and 49 % Chardonnay crafted under Chef de Cave Vincent Chaperon with parcel fermentations in stainless steel and oak Followed by at least eight years on lees before disgorgement yielding a refined, structured Champagne

Vineyards and Micro Climate:

Grapes sourced from Grand Cru sites across Montagne de Reims, Vallée de la Marne, and Côte des Blancs 2015 featured spring frost, a hot dry summer, and a long cool autumn Chalky soils and maritime climate preserved bright acidity and concentrated flavors

Vinification & Aging Methods:

Separate parcel fermentations in stainless steel and oak barrels followed by a minimum of eight years lees aging Low dosage to enhance minerality texture and purity of the wine

Tasting Notes:

Bright straw color with fine mousse Notes of roasted cocoa, spicy citrus, white flowers, mint, white pepper, slate, orchard fruit and saline minerality Rich texture and layered complexity finish is long and focused

Food & Wine Pairing:

Pairs beautifully with refined seafood like caviar, oysters, lobster and langoustine Complements poultry, light meats, creamy pastas and dishes with citrus or herbal accents Afternoon structures shine with shellfish and rich hors d’oeuvres

Service Methods and Temperatures:

Serve at 10 °C in large white‑wine or tulip glasses to preserve mousse and concentrate aromas Gentle swirl enhances layered aromatics and depth No decanting required ()
