Dom Pérignon is Moët & Chandon’s flagship prestige vintage Champagne introduced in 1921 Dom Pérignon is only produced in exceptional years with a minimum of eight years on lees before release Known for celebrating terroir and vintage personality Dom Pérignon 2012 reflects the house’s philosophy of time as a co‑winemaker combining precision, intensity and elegance over decades of maturation

Producer and Wine Maker:

Under Chef de Cave Vincent Chaperon and his cellar team the 2012 vintage was crafted from top Grand Cru vineyards Separate parcel fermentation in stainless steel and oak preceded lengthy lees aging before disgorgement in strategic plenitudes ensuring balanced power and finesse

Vineyards and Micro Climate:

Grapes were sourced from renowned Grand Cru sites across Montagne de Reims, Vallée de la Marne and Côte des Blancs The 2012 season was marked by challenging weather with initial frost followed by a warm, dry summer and a long, cool autumn that concentrated flavors while retaining vibrant acidity

Vinification & Aging Methods:

Separate fermentation in stainless steel and oak barrels was followed by at least eight years on lees The 2012 release involved extended cellar aging before disgorgement Offering minimal dosage to enhance structure, minerality and texture that ensure long‑term evolution ()

Tasting Notes:

Pours a bright pale straw color with focused mousse The nose shows citrus curd, flint, toast, mandarin, white peach and toasted nut aromas The palate is structured and vibrant with stone fruits, aniseed, chalky minerals and a precise, lingering finish

Food & Wine Pairing:

Pairs beautifully with refined shellfish such as oysters, lobster or scallops Moderate poultry dishes, creamy pastas, mild herb‑driven preparations, sushi and caviar are also excellent matches The wine’s vibrant acidity and depth enhance complex culinary flavors

Service Methods and Temperatures:

Serve at 10 °C in large white‑wine or tulip glasses to preserve mousse and concentrate aromatics Gentle swirling after pouring releases layered aromas No decanting required

Storage and Aging Potential:
