Winery Background and History:

Dom Pérignon was introduced by Moët & Chandon in 1921 as a prestige vintage Champagne named after the 17th‑century Benedictine monk. Known for its meticulous vintage-only releases, the Rosé variant debuted in 1959. The 2000 Rosé reflects a stylistic evolution—bold, expressive, rich, and refined—a clear statement of Dom Pérignon’s drive for innovation and excellence over decades 


Producer and Wine Maker:

Under Chef de Cave Richard Geoffroy (vintage team) and now Vincent Chaperon, the 2000 Rosé blend was crafted from Grand Cru Pinot Noir and Chardonnay grapes. A portion of Pinot Noir is vinified as still red wine to enhance color, texture, and complexity. Fermentation occurs in a mix of stainless steel and oak, followed by secondary in-bottle aging before release 


Vineyards and Micro Climate:

The 2000 Rosé draws from Grand Cru sites in Montagne de Reims and Côte des Blancs. A cooler-than-average summer followed by a warm, long September produced ripe, structured fruit with vibrant acidity. Chalky soils and maritime-influenced diurnal shifts enabled phenolic development ideal for Rosé’s bold character 


Vinification & Aging Methods:

Partial oak fermentation enhances structure, with 25 % Pinot Noir still wine included for pigment and flavor. The cuvée rested on lees for many years in underground cellars. Disgorged after extensive aging, the 1500 ml format showcases rich tertiary complexity and long extended finish 


Tasting Notes:

The 2000 Rosé reveals a radiant salmon‑copper hue with fine mousse. Aromas of wild strawberry, raspberry, fig bramble, candied citrus peel, and exotic spice lead to a rich palate of crème brûlée, dried apricot, glazed almond, cinnamon toast, mocha, and chalky minerality, finishing long and precise 


Food & Wine Pairing:

Exceptional with luxurious seafood such as lobster, scallops, sashimi, and langoustine. Also complements creamy poultry dishes, truffle risotto, and aged cheeses. Echoes of dried fruits and spice make it suitable for rich savory cuisine ()


Service Methods and Temperatures:

Serve at 10 °C in large tulip- or fine-stemmed glasses to highlight complex aromas and preserve elegance. No decanting is required, but gentle swirling will help express tertiary layers


Storage and Aging Potential:

When cellared at 10–12 °C with 70–80 % humidity and darkness, the 2000 Rosé in magnum will evolve gracefully beyond 2040, developing deeper notes of honeycomb, pastry, spice, smoke, and savory complexity while retaining freshness ()
