Dom Pérignon was founded in 1921 as Moët & Chandon’s prestige vintage label named after the 17th‑century monk Dom Pierre Pérignon. It is produced only in exceptional years and is celebrated for its aged releases known as plénitudes The P2 represents the second maturation peak, releasing after 15 to 20 years of bottle aging It reflects Dom Pérignon’s philosophy of time as a co‑winemaker creating depth complexity and longevity
Producer and Wine Maker:
Veteran Chef de Cave Vincent Chaperon leads production alongside a dedicated cellar team Under his guidance grapes from select Grand Cru vineyards are carefully harvested and vinified Parcellar fermentation followed by long lees aging in Dom Pérignon’s historic cellars is rigorously monitored for optimal timing of P2 disgorgement
Vineyards and Micro Climate:
The blend draws from 17 Grand Cru villages in Champagne, with 55 % Pinot Noir and 45 % Chardonnay in 2006 Chalky soils and a cool maritime climate with warm summers and cool nights ensure phenolic ripeness plus acid structure The 2006 growing season featured a hot dry summer followed by a long steady September harvest, ideal for full flavor and aging potential
Vinification & Aging Methods:
Parcels are fermented separately in stainless steel and oak, followed by primary aging in bottle for about ten years The wine rests on lees in Dom Pérignon’s underground cellars before P2 disgorgement at around 15 years after vintage Dosage is low to maintain purity and tension
Tasting Notes:
Bright golden yellow with slight amber hues The nose offers toasted brioche, candied citrus peel, roasted pineapple, white peach, honeywood and aniseed Flavors evolve to crème brûlée, orchard fruits, warm spice, and chalky minerality delivering a rich full palate with refined tension and an enduring finish
