Vineyards and Micro Climate
The grapes for the 2020 Noble One were sourced from De Bortoli’s own estate vineyards and a long-standing grower in the Riverina region. This area is characterized by a warm, Mediterranean climate with foggy and humid autumns, ideal for the development of Botrytis cinerea, or “noble rot.” The 2020 season featured a relatively dry winter, late spring rains, and timely summer precipitation, creating optimal conditions for Botrytis infection and concentration of flavors in the grapes.
Vinification & Aging Methods
The Botrytis-affected Semillon grapes were hand-harvested and crushed, then left overnight to enhance flavor and sweetness extraction. Following pressing, the juice was clarified and fermented in stainless steel tanks. Fermentation was carefully monitored and halted at the desired balance of alcohol, sweetness, and acidity. The wine was then matured for 12 months in French oak barriques—37% new, 33% one- and two-year-old, and 30% unoaked—to impart complexity while preserving fresh fruit characteristics.

The 2020 Noble One exhibits opulent layers of stone fruits such as peach and nectarine, intertwined with citrus zest and honey-drenched apricots. Subtle hints of nougat and vanilla bean from French oak maturation add depth.
