Winery Background and History

Established in 1928 by Italian immigrant Vittorio De Bortoli, De Bortoli Wines has grown into one of Australia’s most renowned family-owned wineries. Located in the Riverina region of New South Wales, the winery has expanded its operations to include vineyards in Yarra Valley, King Valley, and Hunter Valley. The Melba Vineyard, situated in Dixons Creek, Yarra Valley, was planted exclusively to Cabernet Sauvignon in 1971 and has since become the cornerstone of De Bortoli’s premium Cabernet program.


Producer and Wine Maker

De Bortoli Wines is currently managed by the third generation of the De Bortoli family, with Darren De Bortoli serving as Managing Director. The Melba Vineyard Cabernet Sauvignon is crafted by Chief Winemaker Steve Webber, who emphasizes minimal intervention and a focus on site expression. The winemaking process involves hand-harvesting, meticulous sorting, and fermentation in custom fermenters, followed by 18 months of maturation in oak barrels and an additional 12 months of bottle aging before release.


Vineyards and Micro Climate

The grapes for the 2018 Melba Vineyard Cabernet Sauvignon are sourced from the oldest vines on the Dixons Creek property in the Yarra Valley. This cool-climate region is characterized by moderate temperatures, ample rainfall, and well-drained soils, providing ideal conditions for the cultivation of Cabernet Sauvignon. The vineyard’s north-facing slopes and careful canopy management contribute to the development of fruit with concentrated flavors and balanced acidity.


Vinification & Aging Methods

The 2018 vintage underwent fermentation in custom fermenters, with a focus on gentle extraction to preserve the fruit’s integrity. Post-fermentation, the wine was matured for 18 months in a combination of new and seasoned French oak barrels, followed by 12 months of bottle aging to enhance complexity and integration. This meticulous approach results in a wine that showcases the elegance and structure characteristic of Yarra Valley Cabernet Sauvignon.


Tasting notes

The 2018 De Bortoli Melba Vineyard Cabernet Sauvignon presents a deep, bright red hue with purple edges. Aromas of blackcurrants, cedarwood, and tobacco are complemented by notes of ripe blackberry, smoke, and cocoa. On the palate, the wine offers red currants, fresh cassis, and hints of cloves and juniper, supported by fine powdery tannins and a soft, gentle finish. 


Food & Wine Pairing

This elegant Cabernet Sauvignon pairs well with a variety of dishes, including grilled lamb chops, beef tenderloin, and roasted duck. Its structured tannins and complex flavors also complement hearty vegetarian dishes like mushroom risotto or eggplant parmigiana. A selection of aged cheeses, such as cheddar or gouda, can further enhance the wine’s nuanced profile.


Service Methods and Temperatures

To fully appreciate the nuances of this wine, serve it at a temperature between 16–18°C (61–64°F). Decanting for at least an hour before serving can help open up the wine’s aromas and soften its tannins. Use large, Bordeaux-style wine glasses to allow the wine to breathe and to concentrate its complex bouquet.


Storage and Aging Potential

The 2018 Melba Vineyard Cabernet Sauvignon is built for longevity and can be cellared for up to 15 years or more under optimal conditions. Store the wine in a cool, dark place with a consistent temperature and humidity to preserve its quality. Over time, the wine will develop additional complexity, with tertiary notes of leather, earth, and dried fruit emerging to complement its existing flavor profile.
