Winery Background and History

Established in 1928 by Italian immigrant Vittorio De Bortoli, De Bortoli Wines has grown into one of Australia’s most esteemed family-owned wineries. Initially rooted in the Riverina region of New South Wales, the winery expanded into the Yarra Valley in 1987, acquiring an existing vineyard and winery. The Yarra Valley Estate, managed by Leanne De Bortoli and her husband, winemaker Steve Webber, has become renowned for producing premium cool-climate wines, reflecting the family’s commitment to quality, innovation, and sustainability.

Producer and Winemaker

The 2022 DB Family Selection Shiraz Cabernet was crafted under the guidance of Winemaker John Coughlan, who brings extensive experience and a passion for producing premium wines. Coughlan’s meticulous approach ensures that each vintage maintains its renowned quality and character. His philosophy emphasizes minimal intervention, allowing the unique characteristics of the Shiraz and Cabernet Sauvignon grapes to shine through in the final product.

Vineyards and Micro Climate

The grapes for this wine are sourced from De Bortoli’s vineyards in the Riverina region of New South Wales, known for its diverse microclimates and fertile soils. The 2022 growing season featured average rains during winter and early spring, benefiting vine health and fruitfulness. A mild growing season with no prolonged heatwaves provided perfect ripening conditions, allowing the fruit to retain good varietal characteristics and to be harvested at optimal ripeness and flavor.

Vinification & Aging Methods

The fruit was harvested at optimal ripeness to achieve a harmonious balance between freshness of fruit and ripeness of tannins. Fermentation occurred in contact with the skins for at least five days in American oak barrels. This approach results in a wine that is both approachable and layered with flavor.

Tasting notes

The 2022 DB Family Selection Shiraz Cabernet exhibits an intense ruby red color. The nose offers aromas of red and black fruits in jam, with delicate notes of black pepper and cocoa. On the palate, it is meaty, with soft and juicy tannins, medium in body, and offers a long and balanced finish.

Food & Wine Pairing

This Shiraz Cabernet pairs well with a variety of dishes, including grilled sausages, medium-aged cheeses, game, and mushroom-based dishes. Its vibrant acidity and supple tannins also complement dishes like lamb shanks, grilled vegetables, and aged cheeses. The wine’s balance and complexity make it a versatile companion to both simple and elaborate meals.

Service Methods and Temperatures

To fully appreciate the nuances of this Shiraz Cabernet, serve it at a temperature between 16–18°C (61–64°F). Use red wine glasses with a slightly wider bowl to allow the aromas to develop. Decanting for 30 minutes prior to serving can help open up the wine’s bouquet and enhance its flavors. Proper serving enhances the wine’s complexity, allowing its layers of fruit, oak, and acidity to shine through with elegance and balance.

Storage and Aging Potential

The 2022 DB Family Selection Shiraz Cabernet is crafted for both immediate enjoyment and short- to medium-term aging. Stored under optimal conditions—cool, dark, and with consistent temperature and humidity—the wine will maintain its freshness and may develop additional complexity over the next 2–3 years.
