Winery Background and History

Churton Wines, established in 1997 by Sam and Mandy Weaver, is a family-owned estate located in the Waihopai Valley of Marlborough, New Zealand. The winery is renowned for its commitment to organic and biodynamic farming practices, aiming to produce wines that reflect the unique terroir of their hillside vineyards. Churton’s philosophy emphasizes minimal intervention, allowing the natural characteristics of the grapes and the land to shine through in their wines.


Producer and Winemaker

Sam Weaver, a trained biochemist and the founder of Churton Wines, serves as the head winemaker. His scientific background informs his meticulous approach to viticulture and winemaking. Sam’s son, Ben Weaver, has joined the family business, contributing to both vineyard management and winemaking. Together, they focus on producing wines that are expressive, balanced, and true to their origin.


Vineyards and Micro Climate

The grapes for the 2024 Sauvignon Blanc are sourced from Churton’s hillside vineyards in the Waihopai Valley, situated at elevations ranging from 200 to 250 meters above sea level. The vineyards are characterized by a mix of clay and loess soils over a base of ancient river gravels, providing excellent drainage and mineral complexity. The region’s cool, maritime climate, with significant diurnal temperature variations, contributes to the development of vibrant acidity and intense aromatics in the grapes.


Vinification & Aging Methods

The 2024 vintage was hand-harvested and whole-bunch pressed to preserve the delicate aromatics of the Sauvignon Blanc grapes. Fermentation occurred using indigenous yeasts in a combination of stainless steel tanks and seasoned French oak barrels. The wine was aged on its lees for several months, enhancing its texture and complexity. This approach results in a Sauvignon Blanc that balances freshness with depth and structure.


Tasting Notes

The 2024 Churton Marlborough Sauvignon Blanc exhibits an intense, fresh, and floral nose with lifted apricot and lime aromas. On the palate, it is dry and plush in texture, showcasing a great concentration of just-ripe apricots. The wine boasts a vibrant mineral backbone and an impressive strong lime citrus finish. It is supremely balanced with a soft creaminess and exceptional persistence. 


Food & Wine Pairing

This Sauvignon Blanc pairs excellently with a variety of dishes, including shellfish, grilled fish, and fresh salads. Its crisp acidity and citrus notes complement tangy goat cheese and feta, while its fruit-forward profile enhances dishes with citrus-based sauces or herbal accents. Asian cuisine, particularly dishes featuring lemongrass or ginger, also harmonizes well with this wine.


Service Methods and Temperatures

Serve the wine well-chilled at 8°C to 10°C (46°F to 50°F) in medium-sized white wine glasses to fully appreciate its aromatic complexity and balance. No decanting is necessary; however, allowing the wine to breathe for a few minutes after opening can enhance its bouquet.


Storage and Aging Potential

Store bottles in a cool, dark place with consistent temperature and humidity. The 2024 vintage is best enjoyed within 2 to 3 years of release to capture its vibrant freshness and aromatic intensity. While it can be consumed immediately, proper storage will maintain its quality over the short term.
