Vineyards and Micro Climate
The Vaillon Premier Cru vineyard is located on the left bank of the Serein River, benefiting from a southern to southeastern exposure. The vines, averaging 63 to 73 years old, are rooted in Kimmeridgian clay-limestone soils rich in fossilized marine organisms. This terroir imparts a distinctive minerality to the wines. The 2022 growing season experienced warm and dry conditions, resulting in a bountiful harvest of ripe, healthy grapes.
Vinification & Aging Methods
Grapes are hand-harvested and gently pressed using a pneumatic press. Fermentation occurs with natural yeasts, with 55% in temperature-controlled stainless steel vats and 45% in barrels aged 2 to 4 years old, with less than 5% new oak. The wine undergoes full malolactic fermentation and is aged for 12 to 16 months, allowing for natural tartaric stabilization before bottling.

The 2022 Chablis 1er Cru Vaillon exhibits vibrant aromas of lemon and white pepper. On the palate, it is juicy yet fresh and light, with fruity and spicy notes that beautifully intertwine with its minerality.
