Winery Background and History: Domaine Chavy‑Chouet is a 15‑hectare family estate spanning 14 appellations in the Côte de Beaune, founded in 1982 and led by Romaric Chavy since 2014. The domaine emphasizes minimal intervention, gravity-fed cellar logistics, and expressive terroir-driven wines. Its reputation is built on precision, purity, and tradition across both red and white Burgundies. 


Producer and Wine Maker: Romaric Chavy oversees all stages—from viticulture through vinification—using organic or lutte raisonnée practices. Red fermentations typically include up to 20% new wood, native yeasts, no fining or filtration, and around 10–12 months barrel ageing. His approach focuses on elegance, fruit purity, and transparent site expression. 


Vineyards and Micro Climate: Grown on a 0.10 ha plot at the base of the slope in Volnay, the Sous la Chapelle vines are about 10 years old, planted on clay-sand soil with a southeastern aspect. The cooler Côte de Beaune microclimate yields wines of finesse and structured elegance. 


Vinification & Aging Methods: Grapes are hand-harvested, undergo fermentation with ambient yeasts, and receive gentle extraction. The wine is matured for approximately 10–12 months in barrels (about 20% new oak), bottled unfined and lightly filtered to retain texture and purity. 


Tasting Notes: Aromas of red cherries and black berries with leather and subtle earthiness. The palate is smooth with supple, elegant tannins and bright acidity, showing berry fruit and a feminine, refined character. A gentle finish of forest floor and spice completes the profile. 


Food & Wine Pairing: Ideal with roast duck, game birds (such as pheasant or goose), mushroom-based dishes, herb-crusted lamb, and soft-aged cheeses. Its delicate tannins and savory fruit complement richer and earthy cuisine beautifully. 


Service Methods and Temperatures: Serve in a medium–large Burgundy glass at 14–16 °C. A short decant (~30 minutes) will open aromatics and soften the youthful tannin structure.


Storage and Aging Potential: Best enjoyed between 2023 and 2032. With proper cellar conditions (~12–14 °C, ~70% humidity), this wine maintains elegance while developing tertiary notes like leather, truffle, and dried florals. 🔒


Grape Varietals & Percentage Used: 100% Pinot Noir, in line with Volnay Premier Cru AOC regulations.
