Winery Background and History

Château Pavie, located in the Saint-Émilion appellation of Bordeaux, France, has a rich history dating back many centuries. In 1998, Gérard Perse acquired the estate, ushering in a new era of quality and innovation. Under his ownership, Château Pavie was elevated to the rank of Saint-Émilion Premier Grand Cru Classé “A” in 2012, reflecting its status among the elite Bordeaux producers.

Producer and Winemaker

Gérard Perse, the proprietor of Château Pavie, is known for his meticulous attention to detail and commitment to excellence. His approach includes significant investments in vineyard management and winemaking facilities, ensuring that each vintage expresses the unique terroir of the estate.

Vineyards and Microclimate

Château Pavie’s vineyards are situated on the renowned Côte Pavie slopes, characterized by limestone and clay soils. This terroir provides excellent drainage and contributes to the complexity and minerality of the wines. The south-facing orientation ensures optimal sun exposure, aiding in the ripening of the grapes.

Grape Varietals

The 2010 vintage of Château Pavie is composed of:

70% Merlot

20% Cabernet Franc

10% Cabernet Sauvignon

Vinification & Aging Methods

The grapes for the 2010 vintage were harvested between October 12 and 19, with a low yield of 26 hectoliters per hectare, ensuring concentration and quality. Fermentation occurred in wooden vats, followed by aging in 100% new oak barrels for approximately 18 months. This process imparts structure and depth to the wine, allowing it to develop complexity over time.

ABV (Alcohol by Volume)

The 2010 Château Pavie has an alcohol by volume (ABV) of approximately 14.5%.

Tasting Notes

The 2010 Château Pavie exhibits a deep, opaque purple color. The nose is rich with aromas of blackberries, cassis, and hints of licorice, complemented by subtle notes of espresso and minerals. On the palate, it is full-bodied and powerful, with layers of ripe dark fruits, well-integrated tannins, and a long, persistent finish. This vintage is noted for its balance between concentration and elegance, promising excellent aging potential.

Food & Wine Pairing

This wine pairs well with rich dishes such as roasted lamb, beef tenderloin, and game meats. Its robust structure and depth complement hearty fare, making it suitable for special occasions and gourmet meals.

Service Methods and Temperatures

It is recommended to decant the 2010 Château Pavie for at least two hours before serving to allow the wine to open up and reveal its full aromatic profile. Serve at a temperature of 16-18°C (60-64°F) to fully appreciate its complexity and balance.

Storage and Aging Potential

The 2010 vintage of Château Pavie is built for long-term aging and is expected to develop further complexity over the next 30-50 years. Proper cellaring conditions, with a consistent temperature of around 12-15°C (54-59°F) and humidity levels of 70-75%, will ensure the wine matures gracefully.
