Château d’Aussières is a historic estate located in the Corbières appellation of the Languedoc region in southern France. The estate has a rich history dating back to Roman times and was revitalized in 1999 when it was acquired by Domaines Barons de Rothschild (Lafite). The Rothschild family’s investment aimed to restore the estate’s vineyards and facilities, combining traditional winemaking practices with modern techniques to produce high-quality wines that reflect the unique terroir of the region.

Vinification & Aging Methods

The 2019 vintage underwent fermentation in stainless steel tanks with regular pump-overs to ensure gentle tannin extraction. After malolactic fermentation, 40% of the wine was aged in French oak barrels for 12 to 16 months, while the remaining 60% matured in concrete vats to preserve fruit purity and add complexity.

Château d’Aussières 2019 exhibits a deep ruby color. The nose offers aromas of ripe black fruits, such as blackberry and blackcurrant, along with notes of garrigue herbs, flint, and graphite.
