Winery Background and History

Founded in 1986 by Moët & Chandon, Domaine Chandon Australia is located in Coldstream, Yarra Valley, Victoria. Established by Tony Jordan under Moët‑Hennessy’s vision to craft premium Australian sparkling, it showcases French méthode traditionnelle adapted to cool‑climate Australian terroir  .


Producer and Wine Maker

Chandon’s winemaking team sources fruit from the Strathbogie Ranges, Whitlands Plateau, and Yarra Valley. They expertly blend small proportions of Pinot Noir for color and complexity, using delicate pressing and long lees aging to preserve freshness and fine mousse  .


Vineyards and Micro Climate

Grapes are grown across Victoria’s cooler regions—Yarra Valley, Strathbogie Ranges, and Whitlands Plateau—with morning sun, cool nights, and elevation providing balanced acidity, red fruit concentration, and aromatic clarity  .


Vinification & Aging Methods

Crafted via traditional méthode traditionnelle, base wines from Chardonnay, Pinot Noir, and Pinot Meunier undergo secondary fermentation in bottle. Approximately 60% Pinot Noir (including 6% skin-fermented), plus Chardonnay and Meunier, the wine is aged on lees then disgorged non‑vintage  .


Tasting Notes

Pale salmon-pink hue with aromas of redcurrant, cherry sorbet, and pink grapefruit zest. The palate is refreshing and dry, with red fruits, subtle hazelnut, and biscuit notes on a crisp, lingering finish  .


Food & Wine Pairing

An impeccable aperitif, it also pairs beautifully with charcuterie and cheese boards, shellfish, sushi, smoked salmon, and light spicy dishes—its bright spices and fine bubbles complement a range of flavors ().


Service Methods and Temperatures

Serve chilled at 8–10 °C in a tulip or flute glass to maintain bubble integrity and amplify aromatics. No decanting needed.


Storage and Aging Potential

Best enjoyed young (within 2–3 years of bottling). Store in cool (10–12 °C), dark conditions to preserve freshness and effervescence.
