Winery Background and History

Domaine Chandon Australia was established in 1986 by Moët & Chandon in Coldstream, Yarra Valley, Victoria. Founded under the direction of Tony Jordan, it became the first French méthode traditionnelle sparkling house in Australia, crafting elegant wines that reflect the region’s cool-climate terroir and French winemaking heritage  .


Producer and Wine Maker

Led by Chief Winemaker Dan Buckle and his team, Chandon Australia sources premium Chardonnay, Pinot Noir, Pinot Meunier, plus small components of Pinot Gris and Petit Meslier. They focus on meticulous harvest, balanced fermentations, and extended lees aging to ensure refined texture and depth  .


Vineyards and Micro Climate

Fruit is sourced from cool-climate vineyards in Yarra Valley, Strathbogie Ranges, and Whitlands Plateau (approx. 300–500 m elevation). The combination of gravelly and clay soils, mountain breezes, and significant diurnal temperature variation creates bright acidity and pure varietal character  .


Vinification & Aging Methods

Base wines are fermented in stainless steel and select oak, then blended. Secondary fermentation occurs in bottle (méthode traditionnelle), followed by 12–18 months on lees before disgorgement. The wine remains unfined and lightly filtered with moderate dosage ().


Tasting Notes

Pale straw with flashes of green; aromas of citrus blossom, green apple, pear, nougat, and toasted brioche. The palate is creamy and vibrant, offering pear, lemon zest, sourdough, and delicate nutty complexity, finishing crisp and refreshing  .


Food & Wine Pairing

Pairs beautifully with fresh seafood (oysters, scallops, calamari), smoked salmon, creamy cheeses, meaty fish like salmon/tuna, salads, and light Asian-inspired dishes. Its balance of freshness and texture makes it versatile  .


Service Methods and Temperatures

Serve chilled (8–10 °C) in a tulip or flute glass to concentrate aromatics and maintain mousse. No decanting required; allow a brief rest post-opening for optimal enjoyment.


Storage and Aging Potential

Best consumed within 2–3 years of disgorgement. Store in a cool (10–12 °C), dark environment. Though drinkable young, the wine shows best complexity when cellared up to 5 years from vintage date.
