Winery Background and History
Bodegas CARO is a prestigious collaboration between two renowned wine families: Domaines Barons de Rothschild (Lafite) from France and the Catena family from Argentina. Established in 1999, the partnership aims to combine the elegance and expertise of Bordeaux with the rich terroir and tradition of Mendoza. The name “CARO” is derived from the initials of Catena and Rothschild, symbolizing the fusion of their winemaking philosophies. The winery focuses on producing high-quality wines that reflect the unique characteristics of Argentine terroir while incorporating French winemaking techniques.
Producer and Winemaker
The winemaking at Bodegas CARO is overseen by Philippe Rolet, who brings extensive experience from both Old and New World wine regions. Rolet emphasizes minimal intervention in the cellar to allow the true expression of the vineyard’s terroir. Under his guidance, the estate focuses on producing wines that are balanced, elegant, and reflective of their origin.
Vineyards and Micro Climate
The grapes for Caro 2021 are sourced from select vineyards in Mendoza, Argentina, particularly from the regions of Luján de Cuyo and the Uco Valley. These areas are known for their high-altitude vineyards, with elevations ranging from 900 to 1,400 meters above sea level. The climate is characterized by warm days and cool nights, which contribute to the development of complex flavors and balanced acidity in the grapes. The soils are diverse, including alluvial, sandy, and clay compositions, providing a range of expressions in the wine.
Vinification & Aging Methods
The 2021 vintage underwent meticulous vinification processes. Grapes were hand-harvested and carefully sorted before fermentation in stainless steel tanks. The wine was then aged for 18 months in French oak barrels, 60% of which were new, sourced from the Tonnellerie des Domaines Barons de Rothschild. This aging process imparts additional complexity and structure to the wine.
Tasting Notes
Caro 2021 exhibits a deep ruby color. The nose is complex, offering aromas of red fruits, figs, and delicate notes of blueberries. On the palate, the wine is well-balanced and round, with soft tannins and flavors of blackcurrant, graphite, and liquorice. The finish is long and elegant, showcasing the harmonious blend of Malbec and Cabernet Sauvignon.
Food & Wine Pairing
This wine pairs excellently with hearty dishes such as grilled red meats, lamb, and game. Its robust structure and complex flavors also complement aged cheeses and rich stews. For a vegetarian option, consider pairing it with mushroom-based dishes or lentil casseroles.
Service Methods and Temperatures
To fully appreciate its complexity, serve Caro 2021 at 16–18°C (60–64°F). Decanting for at least 1 hour before serving is recommended to allow the wine to open up and reveal its full aromatic potential. Use a Bordeaux-style glass to concentrate its aromas and enhance the tasting experience.
Storage and Aging Potential
Caro 2021 is suitable for aging and can be cellared for up to 15 years under proper conditions. Store the wine horizontally in a cool, dark place with a consistent temperature and humidity to allow it to develop additional complexity over time.
