Winery Background and History

Château d’Aussières, nestled in the Corbières appellation of Languedoc-Roussillon, France, boasts a rich viticultural heritage dating back to Roman times. Acquired in 1999 by Domaines Barons de Rothschild (Lafite), the estate underwent significant revitalization, blending traditional winemaking practices with modern techniques. The Rothschild family’s investment aimed to restore the estate’s vineyards and facilities, producing wines that reflect the unique terroir of the region.

Producer and Winemaker

The winemaking at Château d’Aussières is overseen by the team at Domaines Barons de Rothschild (Lafite), who bring extensive experience from their Bordeaux estates. The team emphasizes minimal intervention in the cellar to allow the true expression of the vineyard’s terroir. Under their guidance, the estate focuses on producing wines that are balanced, elegant, and reflective of their origin.

Vineyards and Micro Climate

The vineyards of Château d’Aussières are situated in the rugged terrain of the Corbières appellation, characterized by a Mediterranean climate with hot, dry summers and mild winters. The estate’s vineyards are planted on a variety of soils, including limestone, clay, and schist, which contribute to the complexity of the wines. The proximity to the Mediterranean Sea provides cooling influences that help maintain acidity and freshness in the grapes.

Vinification & Aging Methods

Grapes are hand-harvested and carefully sorted before fermentation in stainless steel tanks. The wine undergoes temperature-controlled fermentation to preserve its aromatic potential. Post-malolactic fermentation, a portion of the wine is aged in French oak barrels for 12 to 16 months, while the remaining matures in concrete vats, balancing fruit purity with added complexity.

Tasting Notes

Blason d’Aussières 2020 presents a deep ruby color with violet hues. The nose is expressive, offering aromas of ripe red fruits, sweet spices, and roasted dried fruit. On the palate, it is generous and balanced, showcasing flavors of blackberry, redcurrant, liquorice, and hints of pepper. The wine captures the essence of the garrigue, delivering a harmonious and elegant finish.

Food & Wine Pairing

This wine pairs excellently with hearty dishes such as grilled red meats, lamb, and game. Its robust structure and complex flavors also complement aged cheeses and rich stews. For a vegetarian option, consider pairing it with mushroom-based dishes or lentil casseroles.

Service Methods and Temperatures

To fully appreciate its complexity, serve Blason d’Aussières 2020 at 16–18°C (60–64°F). Decanting for at least 1 hour before serving is recommended to allow the wine to open up and reveal its full aromatic potential. Use a Bordeaux-style glass to concentrate its aromas and enhance the tasting experience.

Storage and Aging Potential

Blason d’Aussières 2020 is suitable for aging and can be cellared for up to 5–7 years under proper conditions. Store the wine horizontally in a cool, dark place with a consistent temperature and humidity to allow it to develop additional complexity over time.
