Distillery Background and History

Beefeater 24 is a premium expression from the classic Beefeater brand, which has long operated in London (currently in Kennington). The “24” variant was introduced to elevate the brand by emphasizing more intricate botanical treatment and longer infusion time. 


Master Distiller and Production Philosophy

Under the guidance of master blender Desmond Payne, Beefeater 24 aims to retain the bold, juniper-centric character of the original while layering subtleties through additional botanicals and a prolonged maceration (24 hours) step. 


Source of Ingredients (Grain, Water, Yeast)

The base spirit is a neutral grain spirit (from wheat or grain mash). Botanicals include the traditional Beefeater core (juniper, coriander seed, angelica root, lemon & orange peel, etc.) plus added elements: Japanese sencha tea, Chinese green tea, grapefruit peel, and almond. 


Distillation Process

Botanicals are macerated for 24 hours in the spirit before distillation — a longer steep than typical London Dry gins. The mixture is then distilled in copper stills, keeping the heart cut and discarding heads and tails to maintain purity. 


Maturation & Cask Information

As a gin, Beefeater 24 is not matured in wood. It is bottled soon after distillation / blending and filtering.


Tasting Notes

 

  • Nose: Juniper, bright citrus (grapefruit, lemon), subtle tea leaf aroma, with herbal and slightly nutty undertones. 

  • Palate: Balanced citrus and juniper core, mild bitterness from grapefruit peel, green tea vegetal note, light spice, almond softness. 

  • Finish: Dry, lingering citrus zest, slight tea astringency, and mellow botanical depth. 

 


Food Pairing Suggestions

Pairs well with seafood (oysters, ceviche), light fish dishes, fresh salads, soft cheeses, or grilled vegetables. It also works nicely with citrus-based desserts and herbal appetizers.


Service Methods and Ideal Glassware

Serve chilled or over ice. Use a Copa de Balón or large tulip gin glass to allow aromas to develop. A classic Gin & Tonic is a great serve—G&T with a twist of grapefruit works especially well with this expression.


Storage and Aging Potential

Once bottled, it remains stable under standard conditions (cool, dark storage). As gin is not meant for aging in bottle, further maturation yields minimal evolution.
