Winery Background and History

André Clouet is a family-owned Champagne house based in Bouzy, a village renowned for its Grand Cru vineyards. The Clouet family has been crafting Champagne for over two centuries, with a lineage tracing back to the court of Louis XV, where ancestors served as official scribes. This heritage is reflected in their meticulous approach to winemaking, combining traditional methods with a deep respect for terroir. The estate spans approximately 9 hectares of vineyards, all classified as Grand Cru, emphasizing the family’s commitment to producing high-quality, expressive Champagnes that honor their storied past.

Producer and Wine Maker

Jean-François Clouet, the current custodian of the estate, continues the family’s legacy with a hands-on approach to viticulture and vinification. Emphasizing minimal intervention, Jean-François allows the unique characteristics of each vineyard parcel to shine through. His philosophy centers on preserving the purity of the fruit and the expression of terroir, resulting in Champagnes that are both elegant and complex. Under his guidance, André Clouet has gained recognition for producing wines that balance traditional craftsmanship with a modern sensibility, appealing to both connoisseurs and new enthusiasts alike.

Vineyards and Micro Climate

The vineyards are situated in Bouzy, a Grand Cru village on the Montagne de Reims, known for its chalky soils and favorable microclimate. The region benefits from a continental climate with moderate rainfall, providing optimal conditions for grape cultivation. The chalk subsoil ensures excellent drainage and imparts a distinct minerality to the wines. The vineyards are planted predominantly with Pinot Noir and Chardonnay, with meticulous care taken to maintain vine health and soil vitality. This terroir contributes to the richness and depth characteristic of André Clouet’s Champagnes.

Vinification & Aging Methods

The 2012 Dream Vintage is crafted exclusively from Chardonnay grapes, harvested by hand to ensure optimal ripeness and quality. Fermentation occurs in stainless steel tanks at controlled temperatures to preserve the delicate aromatics of the Chardonnay. Following primary fermentation, the wine undergoes malolactic fermentation to enhance its texture and complexity. It is then aged on the lees in bottle for a minimum of 36 months, allowing for the development of nuanced flavors and a fine mousse. The dosage is kept low to maintain the wine’s purity and freshness.

Tasting notes

This Champagne presents a luminous golden hue with fine, persistent bubbles. On the nose, it offers an elegant bouquet of ripe white fruits, citrus zest, and subtle floral notes, complemented by hints of brioche and almond. The palate is refined and well-balanced, showcasing flavors of pear, lemon curd, and toasted nuts, underpinned by a vibrant acidity and a chalky minerality. The finish is long and crisp, leaving a lasting impression of finesse and harmony.

Food & Wine Pairing

The 2012 Dream Vintage pairs beautifully with a variety of dishes. Its brightness and acidity complement seafood such as oysters, scallops, and grilled prawns. The wine’s richness also makes it an excellent match for creamy cheeses like Brie or Camembert, as well as poultry dishes with light sauces. For a luxurious pairing, serve it alongside lobster thermidor or a delicate foie gras terrine, where the Champagne’s complexity and freshness will enhance the flavors of the dish.

Service Methods and Temperatures

To fully appreciate its nuances, serve this Champagne chilled at a temperature of 8–10°C (46–50°F). Use a tulip-shaped glass to concentrate the aromas and allow the wine to breathe, enhancing its bouquet and flavor profile. Avoid using flutes, as they can restrict the aromatic expression. Pour gently to preserve the effervescence, and consider decanting if the wine has been aged further to open up its full aromatic potential.

Storage and Aging Potential

The 2012 Dream Vintage has been aged for several years before release, offering immediate enjoyment. However, it also possesses excellent aging potential. When stored in optimal conditions—cool, dark, and humid environment with a consistent temperature around 10–12°C (50–54°F)—it can develop further complexity over the next 5 to 10 years. Over time, expect the emergence of richer, more nuanced flavors, including notes of honey, dried fruits, and toasted brioche, adding depth to its already elegant profile.
