Producer and Wine Maker
Today led by Franco Allegrini and his children, the family’s winemaking philosophy blends precision viticulture with modern techniques. Oasi San Giacomo is vinified to highlight freshness and purity—with careful handling and climate monitoring ensuring each vintage embodies structured elegance.
Vineyards and Micro Climate
The vines grow on south-west facing hills between Lavagno and Mezzane di Sotto (Verona province), at 150–250 m altitude, in chalky volcanic soils. These hillside sites, part of a biodiversity reserve, benefit from excellent drainage, cool night-time breezes, and a balanced microclimate.
Vinification & Aging Methods
Grapes are hand-harvested in late September to early October. Vinification includes an 18-hour cryo-maceration at 10 °C, followed by fermentation in temperature-controlled stainless steel at 15 °C for 8–10 days. The wine ages on fine lees for 4 months before bottling and rests for another 2 months before release.
Tasting Notes
The wine pours bright straw-yellow with green tinges. Aromatics offer white flowers, citrus zest, and grapefruit. On the palate, it is lively and fresh, with pronounced salinity, minerality, and lingering volcanic freshness—both elegant and youthful.

Excellent with Mediterranean fare such as saffron risotto, seafood spaghetti, grilled fish, chicken salad with fennel and oranges, and lighter poultry dishes.
