Winery Background and History

Domaine d’Aussières, located in the Corbières region of Languedoc, France, boasts a winemaking heritage dating back to 97 AD. Once a vital supplier of wine to Rome, the estate experienced various transformations over the centuries. In 1999, Baron Eric de Rothschild acquired the property, revitalizing it with a commitment to sustainable viticulture and excellence. Today, Domaine d’Aussières is recognized for producing wines that harmoniously blend tradition with modernity, reflecting the unique terroir of the region.

Producer and Winemaker

A d’Aussières Rosé 2023 is crafted by the dedicated team at Domaine d’Aussières, under the ownership of Domaines Barons de Rothschild (Lafite). The winemaking philosophy emphasizes minimal intervention, allowing the natural expression of the grapes and terroir to shine. The team employs sustainable practices throughout the vineyard and winery, ensuring that each bottle embodies the estate’s commitment to quality and environmental stewardship.

Vineyards and Micro Climate

The vineyards of Domaine d’Aussières span 167 hectares on the foothills of Fontfroide, south of Narbonne. The soils vary from shallow, rocky terrains on the slopes to deeper, sandy compositions in the plains. This diversity, combined with a Mediterranean climate characterized by hot, dry summers and mild winters, creates optimal conditions for grape cultivation. The estate’s proximity to the sea and the influence of the “Marin” wind contribute to the freshness and aromatic intensity of the wines.

Vinification & Aging Methods

Grapes for A d’Aussières Rosé 2023 were harvested at optimal maturity and underwent gentle pressing to extract the desired color and flavor. Fermentation occurred in stainless steel tanks at controlled temperatures to preserve the fresh fruit characteristics. The wine was then aged on fine lees for several weeks, enhancing its mouthfeel and complexity before bottling.

Tasting Notes

A d’Aussières Rosé 2023 presents a beautiful pink grapefruit color with glints of raspberry and redcurrant. The nose is rich and complex, offering aromas of white-fleshed fruits and red berries such as strawberries, accompanied by almond blossom. On the palate, the wine is crisp and fresh, with a round and generous texture. The well-balanced acidity contributes to a lengthy and refreshing finish.

Food & Wine Pairing

This rosé pairs excellently with a variety of dishes, including grilled seafood, light salads, and Mediterranean cuisine. Its vibrant acidity and fruity profile complement dishes like shrimp scampi, goat cheese tartlets, or a classic Niçoise salad. It is equally enjoyable on its own, offering a refreshing accompaniment to warm-weather gatherings.

Service Methods and Temperatures

To fully appreciate its freshness and aromatic profile, serve A d’Aussières Rosé 2023 well-chilled at 8–10°C (46–50°F). Use a white wine glass to concentrate its delicate aromas. No decanting is necessary; simply open and enjoy.

Storage and Aging Potential

A d’Aussières Rosé 2023 is best enjoyed young to capture its vibrant fruit flavors and crisp acidity. Store bottles in a cool, dark place at a consistent temperature. While it can be cellared for up to 2 years, it is recommended to consume it within 12–18 months of release to experience its freshness at its peak.
