Country: Scotland
Region: Speyside
Volume: 700ml
Distillery Background and History
Mortlach, established in 1823 in Dufftown, Speyside, Scotland, is known as the region’s first legal distillery. It earned the nickname “The Beast of Dufftown” for its rich, flavorful spirit, pioneered by Dr. Alexander Cowie’s unique 2.81-distillation technique in the late 19th century. Now part of Diageo’s Classic Malts, Mortlach plays a key role in premium blends and its own revered single malts.
Master Distiller and Production Philosophy
Managed by Diageo’s Classic Malts team, Mortlach honors its heritage while maintaining consistent quality. The team embraces the refined 2.81-distillation process, allowing for a robust, savory spirit that balances tradition and precision.
Source of Ingredients (Grain, Water, Yeast)
100% malted barley from Speyside is used, lightly peated. The water is sourced from Conval Hill springs, and fermentation occurs in six traditional larch washbacks using proprietary yeast strains to extract character and depth.
Distillation Process
Mortlach’s renowned 2.81× distillation uses three wash stills and three spirit stills—including the small “Wee Witchie” still—creating a thick, layered spirit unseen elsewhere in Scotch production.
Maturation & Cask Information
Matured for 12 years in a mix of ex-bourbon and ex-sherry casks (American and European oak), this whisky reflects both sweet fruit and spicy oak integration. The Speyside climate fosters gradual maturation, resulting in a well-rounded profile.
Tasting Notes
Nose: Juicy sultanas, candied ginger, nutty fruit cake, dark chocolate, apple, and nut brittle.
Palate: Rich toffee, brown sugar, spiced sponge cake, poached pear, caramel sauce.
Finish: Charred raisins, tart apple, lingering tarte tatin sweetness with gentle oak.
Food Pairing Suggestions
Pairs with aged cheeses (Gouda, Manchego), dark chocolate, spiced nuts, poached pear desserts, and caramel‑based sweets, complementing its nutty and sweet profile.
Serving Suggestions and Ideal Glassware
Serve neat or with a few drops of still water in a Glencairn glass at 16–18 °C to enhance its aromatic complexity and balanced palate.
Storage and Aging Potential
As a mature, pre‑bottled whisky, further aging won’t change its character. Store upright in a cool, dark place (12–16 °C)—it remains stable for years if sealed and protected from light.
