Vineyards and Microclimate

Grapes for the Cabernet Sauvignon Merlot blend are sourced from coastal vineyards in the Western Cape, where the cool sea breezes and moderate temperatures provide ideal conditions for grape cultivation. The soils range from decomposed granite to deep red, offering good drainage and contributing to the development of concentrated fruit flavors. This maritime influence ensures a longer ripening period, enhancing the complexity and balance of the wine.


Vinification & Aging Methods

Harvested by hand at optimal ripeness, the grapes undergo fermentation at controlled temperatures between 24°C and 26°C. The juice remains on the skins for 4 to 5 days to extract color and flavor while maintaining soft tannins. Fermentation occurs in stainless steel tanks to preserve the fresh fruit characteristics. The wine is then matured on fine lees for several months, enhancing its texture and complexity without the influence of oak aging.


Tasting Notes

This wine presents a bright ruby red color. The nose is characterized by abundant cherry and red berry aromas, complemented by subtle oak spices. On the palate, it is medium-bodied and smooth, offering flavors of ripe plum and red fruits. The tannins are soft and elegant, leading to a well-balanced finish with lingering fruit notes.


Food & Wine Pairing

An excellent companion to red meat dishes such as roast lamb, stews, and grilled meats. It also pairs well with carpaccio and robust pasta dishes, where its fruit-forward profile complements the richness of the food. The wine’s versatility makes it suitable for a variety of cuisines, including Mediterranean and hearty vegetarian dishes.


Service Methods and Temperatures

Serve this wine at a temperature of 15–18°C (59–64°F) to fully appreciate its aromatic complexity and balanced palate. No decanting is necessary; however, allowing the wine to breathe for a few minutes after opening can enhance its flavors. Use standard red wine glasses to concentrate the aromas and direct the wine to the appropriate areas of the palate.


Storage and Aging Potential

Designed for early enjoyment, this wine is best consumed within 2–3 years of the vintage to appreciate its fresh fruit character. Store bottles in a cool, dark place with a consistent temperature. While not intended for long-term aging, proper storage will maintain its quality over the short term.
